Grilled Asian Shrimp Tacos

Here is a light tasty meal for any weeknight :)  This recipe is a keeper, hope you enjoy it as well!


Recipe is for two :)


4-5 small peeled deveined shrimp per taco (I made 2 tacos per person)
2 minced garlic cloves
1 TB grated fresh ginger
2 TB soy sauce
2-3 TB olive oil
1 tsp rice wine vinegar
2 TB fresh parsley; chopped
salt and pepper


Mix ingredients.  Place shrimps onto skewers first, then brush marinade over shrimp and place in refrigerator for 15-20 minutes to marinate.


Slaw for tacos:
Asian slaw mix
2 TB sesame ginger dressing of choice
1/2 avocado; diced
1/2 lime
2 TB cilantro; finely chopped


Cilantro Lime Cream:
2 TB cilantro; finely chopped
1/2 cup sour cream
juice of 1/2 lime






Grill shrimp until pink on both sides.  Assemble tacos with slaw, grilled shrimps and cilantro lime cream! YUM!

Easy Chicken Fajitas


2  chicken breasts
1/2 cup wegmans fajita marinade
fajita
1 large onion
1 green pepper
cheddar cheese
flour tortillas

Cut chicken up into bite size strips.  Marinate in fajita marinade for at least 2-3 hours.  Cook chicken in a skillet on medium heat until cooked through.

In another skillet, saute peppers and onions in 1 teaspoon of olive oil.  

In tortilla shells, add chicken, peppers and onions, and cheese.  Enjoy with a side of mexican rice!

Grilled Chicken Tacos

2 chicken breasts
1 tsp. cumin
1 tsp. paprika
1 tsp. garlic powder
3 TB canola oil




Mix ingredients and let sit for 2-3 hours.

1/2 avocado, cut into small bite sized pieces
cilantro
lime

Mix avocado, cilantro and lime juice together. 

1 tomato cut up into bite sized pieces
cheddar cheese
soft taco shells

Grill chicken.  Cut thinly. Layer taco with chicken, avocado mixture, tomatoes and cheese.  Enjoy:)

Tequila Lime Chicken Tacos with Caramelized Onions

Happy Cino de Mayo
All you need is to pair this dish with your favorite Margarita!
 2 chicken breasts
1 medium white onion sliced thin
2 tbsp fresh lime juice
1 tbsp tequila
1 tsp red pepper flakes
1 large garlic clove minced
1/2 tsp salt
1/2 tsp sugar
1 tbsp balsamic vinegar
1/2 cup chopped cilantro
1 can dark kidney beans
fresh monterey jack cheese
soft tortilla 

Combine lime juice, tequila, red pepper flakes and salt in a bowl.  Whisk together and set aside.

In a small saucepan, add dark beans (drained), and cilantro.  Cook on medium - low heat.

Cut chicken up into small bite size pieces.  In a large skillet, heat olive oil.  When hot add chicken and garlic.  When almost cooked through, add lime juice mixture and simmer on low.

In another skillet, heat oil and add onions.  Cook on medium heat until browned.  When the chicken is done cooking, add balsamic vinegar to the onions.  Cook for about 2 minutes.

Assemble:
Heat tortilla shells in skillet or microwave until warmed through.
In a flour tortilla shell, add chicken, bean and cilantro mixture, caramelized onions, and top off with shredded jalapeno monterey jack cheese. Enjoy :)
