Bacon Spinach Quiche

Just in the mood for a delicious breakfast to start off the beautiful fall day.  If it involves baking I can make it!  I had all the ingredients and have been craving this dish, so...I made it!  It is easy and delicious, the two best criteria for cooking in the morning! 

Saute 1/2 small cooking onion and chopped bacon.  Add roughly chopped fresh baby spinach until just heated though.  Layer in pie crust.

Combine 6 eggs, 1 1/2 cups of milk/heavy cream (I used 1/2 of heavy cream, 1 cup milk since we drink skim milk), salt and pepper.  Pour over spinach and bacon saute.

Add Cheese.  I used a mix of cheddar, mozzarella, provolone.  Enough for a think layer on top and lightly mix into egg mixture.

Bake at 375 degrees for 40 minutes.  

Let cool for about 10 minutes.  Enjoy a delicious breakfast!

Sausage Egg Scramble

My first post of my blog I talked about how my husband was the breakfast guru.  Here is one of his yummy breakfast specials.  I can not scramble eggs to save my life.  Probably because breakfast was always my least favorite meal.  Like mother, like daughter...  Now, I do enjoy breakfast, but still am not as good as cooking it as the husband!

Egg Scramble!  

3 eggs
breakfast sausages (we usually use the turkey sausage)
onions
peppers
cheddar cheese

Baked French Toast




I am not usually a breakfast girl, but I do love french toast. My husband is the breakfast guru, but food network magazine featured different ways to prepare french toast and it looked so good I had to try it out! Of course I had to switch it up a bit...


Ingredients:
1 loaf Italian bread
4 tbs. brown sugar
3 eggs
3 tsp. vanilla
1 tsp. cinnamon
1/2 cup - 1 cup pure maple syrup
powdered sugar
5 tbs. butter


Directions:


Pre-Heat oven to 400 degrees.
Slice Italian bread in 1 inch think slices. Beat eggs, vanilla , and cinnamon in a bowl. Soak bread slices in egg mixture. Heat frying pan (medium-high heat) add 1 Tb. of butter to pan. Fry each slice for 1-2 min on each side. You just want to brown each side, you don't want to cook the egg all the way. Place in a baking pan. In frying pan, add brown sugar, butter and pure maple syrup. Mix until has bubbled and thickened. Pour sauce over french toast. Bake for 20 min. Let sit for 5 min before eating. Dust each plate with powdered sugar.  ENJOY :)
