1 Cup brown sugar 1 Tb. Water 1 cup chocolate chips 1 eggs 1 1/4 cups flour 3/4 Tsp. baking soda 1/4 Tsp. salt Andes Candies (1 box) 1. In a saucepan (Med heat), cook sugar, butter and water, stirring occasionally until melted. Remove from heat and stir in chocolate chips until melted. Let cool for 10 minutes. 2. Pour chocolate mixture into large bowl, beat in eggs one at a time. Combine flour, baking soda, and salt, add to mixture and refrigerate for an hour. 3. Preheat oven to 350, lightly grease cookie sheets, roll dough into 1" balls (the dough will actually be fudge-like consistency), bake for 8-10 minutes (don't overbake!) 4. When the cookies come out of the oven, put one candy on top, let it begin to melt and swirl with a knife. Makes about 25 cookies. Enjoy! These cookies are a definite keeper! Chewy, chocolaty and minty, not much can beat it! |
